CZ questions

Also, are there many after market upgrades for the CZ's? Grips, enhance durability internals, or caliber conversion kits (a steel .357sig has appeal)?
Not much concern about durability of internals. If you think you might eventually want a .357 SIG, you need to get a 75B in .40, as a 9mm can't be upconverted. (Barrel diameter of the .40/.357 SIG is incompatible with the 9mm slide.)

You might also consider a Single Action version of the CZ; they have a two-way adjustable trigger that lets you remove takeup to almost nothing, and overtravel can be removed. Your wife would probably find that very accomodating... and you would, too. (The SA models have a slightly different frame with an enhanced beavertail, and ambidextrous safeties which are much larger and easier to use.)

I don't know of any barrel conversions available right now, but Bar-Sto made them some years back, and may eventually make them again -- now that CZ are much more prevalent. (I don't understand why they didn't resume in the past couple of years.)

There are a variety of grips available, and a number of custom grip makers (fairly reasonable prices) that can make thinner grips, etc. I've always been partial to the CZ factory soft-rubber grips, myself -- but have had a number of different custom grips over the years.

Check the CZ Custom Shop (http://czcustom.com) for a wide array of custom parts. Schmeky at http://www.cajungunworks.com is also a good source of innovative mods.
